WINEMAKING
The Reserve Chardonnay grapes were carefully hand picked and brought to the winery in ½ ton bins. The grapes were then whole cluster pressed with only the early press fraction being used for the Reserve Chardonnay program. This juice was lightly racked after 24 hours, leaving the heaviest of sediments behind. The juice was then transferred into a mix of new French and American oak barrels. Once the juice was placed in the barrels it was not disturbed until the final cuvee was blended. Of the initial 20 barrels that were fermented for the program only 10 barrels made the final cut with 80% of those being French oak.

COMMENTS
This wine is well-balanced, with generous richness and crisp acidity. Aromas of pears, vanilla and caramel greet the nose. Appealing flavors of Golden Delicious Apple, pears, nutmeg and vanilla warm the palate and linger deliciously. Try pairing this wine with roasted fowl or pork. Amazing with grilled halibut and fruit salsa!
