Exceptional conditions during the 1998 growing season led to a very successful vintage. A warm, dry summer provided perfect conditions for fruit set and veraison. Consistently hot summer days and cool nights ripened the full clusters evenly, while a mild and dry fall allowed for fuller flavor concentration. We harvested the Cabernet Sauvignon from our estate vineyard during the first days of October.
Winemaking
Shortly after picking, our grapes were crushed into stainless steel tanks. Following a short maceration, yeasts were added to perform alcoholic fermentation. During fermentation, the juice was pumped over a floating cap of skins two to three times a day, depending on the extraction we wanted to achieve (light or heavy). The must was pressed after seven to eight days and the wine racked into oak barrels for a 17-month aging period. We used air dried oak, mostly French with a small portion of American oak.
Winemaker Notes
Our 1998 Cabernet Sauvignon offers dark cherry, ripe prune, and fig aromas nicely shaded with mocha and coffee. Full bodied, glowing with blackberry and black currant flavors, the rich palate shows great balance with a bright acidity and rich, smooth tanins lingering on the generous finish. Drink now or save a few bottles - this one has the intensity to last in the cellar.
