This blend is made of our finest barrels each vintage, composed of 45% Cabernet Franc, 30% Cabernet Sauvignon, 20% Merlot, 5% Petit Verdot, and aged for 22 months in 80% neutral French Oak, and 20% American oak. Winemaking: Fruit picked in the morning, crushed and sent directly into open top fermenters. Cap was punched down two times a day until dry. After pressing, wine was transfer to barrels to complete primary and malolactic fermentation. Tasting notes: Dense garnet color core with a purple rim is the first hint that this is a wine in the "Tradition" heritage. Ripe black and red fruit (cassis, black cherry and Morello Cherry) on the nose are interwoven with secondary notes of dried violets and green tobacco complemented by barrel qualities of caramel, coconut and molasses. Cassis and black cherry echo on the plush palate backed by generous raspberry and juicy Rainier Cherries leading to a seductive finish of minerals expressive of the estate soils. This is not your over the top cocktail wine. This complex and balanced, food friendly Bordeaux-style blend begs for a flank steak marinated in soy sauce and herbs d'Provence or a ribeye grilled medium rare simply seasoned with kosher salt and coarse black pepper.
