Dry Rosé, 100% Syrah. The fruit was pressed within the shortest interval from harvest to yield this delicate salmon-pink color. Optimal fermentation kinetics yield a bouquet of raspberry, sour cherry, rose petals and hibiscus. Although this wine carries a higher pH there is firm acidity on the palate with tart flavors of prickly pear, salmonberries and white peach. The finish is clean and lasting, reminiscent of a red berry sorbet.
